Mini Pie Bites with Whipped Cream CARLA HALL

Perfect for a party!

ingredients
MINI PIE BITES WITH WHIPPED CREAM
1 store-bought sweet potato or chess pie
WHIPPED CREAM:
1 cup heavy cream
1 teaspoon confectioners’ sugar
dash of vanilla extract

directions
Spray a 1 1/2 to 2-inch biscuit cutter with nonstick cooking spray, set aside.
For the Whipped Cream: In a large bowl, whip heavy cream until medium-stiff peaks form. Add confectioners’ sugar and vanilla and whisk to fully combine. Transfer mixture to a piping bag fitted with a flute tip.
To assemble: Using prepared biscuit cutter, cut out pie circles within the perimeter of the crust. Gently tap them out of cutter and onto a platter. Garnish with whipped cream and serve.
Tip: Crush some to the pie crust gently and sprinkle on top of mini pie bites for a festive garnish!
