Roast Beef, Cheddar, and Chutney Crostini CLINTON KELLY

Perfect app for entertaining!

1 baguette (cut into 1/2-inch slices)
1/4 cup olive oil
1/2 pound roast beef (thinly sliced)
1/4 cup store-bought mango chutney
1/2 (3.5-ounce) block cheddar cheese (thinly sliced)
red pepper flakes (optional)
flaky sea salt (to taste)

Preheat the grill or broiler for 15 to 20 minutes.
Brush the tops of the bread slices with olive oil and sprinkle with flaky salt. Transfer slices to a baking sheet, and place under the broiler until golden brown, about 2-3 minutes. Remove from the oven and allow to cool slightly.
Spread a little mango chutney on each crostini, and top with 1-2 slices of roast beef and a thin slice of cheddar cheese. Sprinkle with red pepper flakes if desired!
Tip: For a more substantial appetizer, build this into a sandwich in a large piece of foccacia and slice into bite-size squares!
