ingredients
COOKIE DOUGH:
1 stick unsalted butter (softened)
2/3 cup dark brown sugar
2/3 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2 and 1/2 cups all-purpose flour
2 teaspoons Kosher salt
1 cup milk chocolate chips (chopped)
1 cup bittersweet chocolate (chopped)
BATTER:
2 and 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoons Kosher salt
1/2 cup granulated sugar
1 and 1/4 cups whole milk
1 and 1/4 cups buttermilk
2 tablespoons vegetable oil (plus more to fry)
CHOCOLATE SAUCE:
1/2 cup heavy cream
1/2 cup whole milk
1 cup milk chocolate chips
1 cup bittersweet chocolate (chopped)
1 tablespoon unsalted butter
1 teaspoon Kosher salt

For the Cookie Dough: Line a baking sheet with parchment paper.
In the bowl of a hand mixer fitted with a paddle attachment, cream together the butter and sugar until fluffy, about 2 minutes. Add eggs and vanilla extract, continue to mix and set aside. In a separate large bowl add the flour and salt, and whisk to combine. Add the flour mixture into the butter mixture, mix until the mixture comes together into a dough and fold in the chocolate chips. Using a 1-inch scoop, scoop dough onto prepared baking sheet and freeze.
For the Batter: Heat a large Dutch oven over medium heat with 3-inches of vegetable oil at 370ºF.
In a medium bowl, add the flour, baking powder, salt, and sugar and whisk to combine. In a separate large bowl add the milk, buttermilk, and vegetable oil and whisk together. Add the flour mixture into the milk mixture and whisk until incorporated.
Remove dough from freezer and using two forks drop cookie dough balls into batter, then into preheated oil. Fry 2 minutes per side, transfer to a paper towel lined plate, and cool for 2-3 minutes.
For the Chocolate Sauce: Heat a medium saucepan over medium heat and milk and bring to a boil. Remove from heat and add the chocolate chips and bittersweet chocolate. Whisk stirring constantly until smooth. Set aside.
In a large saucepan, combine the heavy cream and whole milk and bring to a boil. In a medium bowl add the milk chocolate chips and bittersweet chocolate and add the hot milk mixture in batches mixing throughout until incorporated. Add the butter and salt and mix to combine.
Drizzle chocolate sauce over cooled cookie dough and serve.
Tip: If cautious about consuming nearly raw eggs, the recipe works just as well without them!
