The best Smoked Turkey Sandwich ever!

2 egg yolks
2 tablespoons warm water
2 teaspoons lemon juice
1 tablespoon distilled white vinegar
1 teaspoon Kosher salt
1/2 teaspoon Dijon mustard
1 and 1/2 cups vegetable oil
1 tablespoon yellow mustard
2 tablespoons honey
6 croissants (split in half, lightly toasted)
1 pound smoked turkey (thinly sliced)
6 slices Swiss cheese
6 leaves bibb lettuce
1 cucumber (thinly sliced)
1 beefsteak tomato (cored, thinly sliced)

For the Honey Mustard Mayonnaise: In the bowl of a food processor fitted with a blade attachment, add egg yolks, water, lemon juice, white vinegar, salt, Dijon mustard, and blend until smooth. With the motor running, slowly pour the vegetable oil into the food processor and blend until emulsified. Remove to a medium bowl and stir in the yellow mustard and honey.
For the Smoked Turkey Croissant: Spread 1 tablespoon of honey mustard mayonnaise on the bottom of each croissant. Top with turkey slices, Swiss cheese and 1 leaf of lettuce, cucumber and tomato slices, and top of croissant. Serve immediately.
Tip: Make a little extra honey mustard mayonnaise and use as a dipping sauce for chicken nuggets!
